- 2 large zucchinis
- 1 cup ricotta cheese
- 1/2 cup feta cheese
- 1/4 cup fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon lemon juice
- 2 cups tomato sauce
- 1/2 cup shredded mozzarella cheese
- Olive oil, for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis thin using a vegetable peeler.
- In a bowl, mix together ricotta, feta, parsley, salt, black pepper, and lemon juice.
- Dollop the filling onto the zucchini slices and roll them up tightly.
- Place the rolls seam-side down in a baking dish with tomato sauce at the bottom.
- Sprinkle mozzarella cheese on top and drizzle with olive oil.
- Bake for 20-25 minutes until bubbly and golden.
- Let cool for a minute before serving.
