- 1/3 cup mayonnaise
- 2 teaspoons Dijon mustard
- 1/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon paprika
- Optional: 1 tablespoon minced shallot, 1/4 teaspoon Tabasco sauce, crumbled bacon bits, chopped fresh herbs, minced pickles
Instructions
- Slice 12 large hard-boiled eggs in half lengthwise.
- Carefully remove egg yolks into a small mixing bowl.
- Mash the yolks using a fork until fine and crumbly.
- Add 1/3 cup mayonnaise to create a smooth mixture.
- Incorporate mustard, salt, pepper, and paprika.
- Mix until filling reaches a creamy consistency.
- Spoon or pipe the yolk mixture back into the egg white halves.
- Garnish with paprika or your choice of toppings.
Notes
Deviled eggs can be made ahead and stored in the refrigerator. For a better texture, use eggs that are 7-10 days old.
