Ingredients

  • 24 slices of sourdough or multigrain bread
  • 1/2 cup fresh cottage cheese
  • 68 slices of ripe tomato
  • Fresh basil leaves
  • Extra-virgin olive oil, for drizzling
  • Optional: Balsamic glaze
  • Flaky sea salt and cracked black pepper to taste

Instructions

  1. Toast bread slices in a skillet with a bit of olive oil or in the oven at 375°F for 5–7 minutes, flipping once.
  2. Spread 2–3 tablespoons of cottage cheese on each slice using the back of a spoon.
  3. Top with 3–4 slices of tomato per toast.
  4. Scatter torn basil leaves on top.
  5. Drizzle with olive oil.
  6. Optional: Add a touch of balsamic glaze.
  7. Finish with flaky sea salt and cracked pepper.
  8. Serve immediately.

Notes
