  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/2 cup chopped spinach or roasted red peppers
  • 1/4 cup cooked sausage or turkey bacon (optional)
  • Cooking spray or silicone muffin liners

Instructions

Whisk eggs and cottage cheese until smooth
  1. Preheat oven to 350°F and grease a muffin tin or line with silicone liners.
  2. In a blender or bowl, combine eggs, cottage cheese, salt, and pepper until smooth.
  3. Stir in shredded cheese, vegetables, and any protein add-ins.
  4. Pour the mixture evenly into the muffin tin cups.
  5. Bake for 20–25 minutes or until puffed and set in the center.
  6. Let cool slightly before removing. Serve warm or store for later.

Notes

To reheat, microwave for 20–30 seconds or warm in a toaster oven at 300°F. Store in fridge up to 5 days or freeze for 2 months. Try variations with feta, smoked gouda, or jalapeños.
