Ingredients

- 6 large eggs
- 1 cup cottage cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese (optional)
- 1/2 cup chopped spinach or roasted red peppers
- 1/4 cup cooked sausage or turkey bacon (optional)
- Cooking spray or silicone muffin liners
Instructions

- Preheat oven to 350°F and grease a muffin tin or line with silicone liners.
- In a blender or bowl, combine eggs, cottage cheese, salt, and pepper until smooth.
- Stir in shredded cheese, vegetables, and any protein add-ins.
- Pour the mixture evenly into the muffin tin cups.
- Bake for 20–25 minutes or until puffed and set in the center.
- Let cool slightly before removing. Serve warm or store for later.
Notes
To reheat, microwave for 20–30 seconds or warm in a toaster oven at 300°F. Store in fridge up to 5 days or freeze for 2 months. Try variations with feta, smoked gouda, or jalapeños.
