Description

A decadent crab brulee combining creamy custard with savory crab and a crispy caramelized topping, perfect for special occasions.


Ingredients

  • 1 cup fresh lump crab meat
  • 1 cup heavy cream
  • 4 large egg yolks
  • 1 shallot (finely chopped)
  • 1 clove garlic (minced)
  • ¼ cup Gruyère cheese (grated)
  • Salt & black pepper (to taste)
  • 1 tbsp fresh parsley (chopped)
  • 2 tbsp sugar (for brulee topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a skillet over medium heat, sauté the shallot and garlic until soft and fragrant (about 2 minutes). Let the mixture cool slightly.
  3. In a large bowl, whisk together the egg yolks, heavy cream, salt, and pepper. Stir in the sautéed shallot, garlic, crab meat, and grated Gruyère cheese. Combine gently.
  4. Divide the custard mixture evenly into 4 small ramekins. Place the ramekins in a baking dish and add hot water until it reaches halfway up the sides.
  5. Bake for 25–30 minutes, until the custard is set but slightly jiggly in the center. Remove and let them cool for 10 minutes.
  6. Sprinkle ½ tablespoon of sugar on top of each custard. Caramelize the sugar using a kitchen torch or broil for 1–2 minutes.
  7. Let the sugar crust harden for 5 minutes before serving warm.

Notes

For the best flavor, use fresh crab meat. Don’t overbake the custard – it should be slightly jiggly.
