A decadent crab brulee combining creamy custard with savory crab and a crispy caramelized topping, perfect for special occasions.
Ingredients

- 1 cup fresh lump crab meat
- 1 cup heavy cream
- 4 large egg yolks
- 1 shallot (finely chopped)
- 1 clove garlic (minced)
- ¼ cup Gruyère cheese (grated)
- Salt & black pepper (to taste)
- 1 tbsp fresh parsley (chopped)
- 2 tbsp sugar (for brulee topping)
Instructions
- Preheat your oven to 325°F (160°C).
- In a skillet over medium heat, sauté the shallot and garlic until soft and fragrant (about 2 minutes). Let the mixture cool slightly.
- In a large bowl, whisk together the egg yolks, heavy cream, salt, and pepper. Stir in the sautéed shallot, garlic, crab meat, and grated Gruyère cheese. Combine gently.
- Divide the custard mixture evenly into 4 small ramekins. Place the ramekins in a baking dish and add hot water until it reaches halfway up the sides.
- Bake for 25–30 minutes, until the custard is set but slightly jiggly in the center. Remove and let them cool for 10 minutes.
- Sprinkle ½ tablespoon of sugar on top of each custard. Caramelize the sugar using a kitchen torch or broil for 1–2 minutes.
- Let the sugar crust harden for 5 minutes before serving warm.
Notes
For the best flavor, use fresh crab meat. Don’t overbake the custard – it should be slightly jiggly.
