Ingredients

  • 4 boneless skinless chicken breasts
  • 1 package (8 oz) full-fat cream cheese, softened
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1/2 cup chopped spinach (fresh or frozen and drained)
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and black pepper to taste
  • 1/2 tsp paprika
  • 1 tbsp olive oil
  • Optional: 1/4 cup chopped sun-dried tomatoes or cooked crumbled bacon
  • Toothpicks or kitchen twine

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Butterfly the chicken breasts or create a pocket by slicing ¾ through each breast.
  3. Season inside and outside with salt, pepper, garlic powder, and paprika.
  4. In a bowl, combine softened cream cheese, shredded cheese, chopped spinach, garlic powder, onion powder, and optional add-ins.
  5. Stuff each chicken breast with 2–3 tablespoons of filling and seal with toothpicks or twine.
  6. Heat olive oil in an oven-safe skillet over medium-high heat. Sear each side of the stuffed chicken for 2–3 minutes until golden.
  7. Transfer to oven and bake for 20–25 minutes, until internal temperature reaches 165°F (74°C).
  8. Optional: Broil for the last 2–3 minutes for a crispy top.
  9. Let rest for 5 minutes before serving. Remove toothpicks and enjoy!

Notes

For best results, chill the cream cheese filling before stuffing. Don’t overfill to avoid leakage, and always cook seam-side down first to help seal the opening.
