- 4 boneless skinless chicken breasts
- 1 package (8 oz) full-fat cream cheese, softened
- 1/2 cup shredded cheddar or mozzarella cheese
- 1/2 cup chopped spinach (fresh or frozen and drained)
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- Salt and black pepper to taste
- 1/2 tsp paprika
- 1 tbsp olive oil
- Optional: 1/4 cup chopped sun-dried tomatoes or cooked crumbled bacon
- Toothpicks or kitchen twine
Instructions
- Preheat oven to 375°F (190°C).
- Butterfly the chicken breasts or create a pocket by slicing ¾ through each breast.
- Season inside and outside with salt, pepper, garlic powder, and paprika.
- In a bowl, combine softened cream cheese, shredded cheese, chopped spinach, garlic powder, onion powder, and optional add-ins.
- Stuff each chicken breast with 2–3 tablespoons of filling and seal with toothpicks or twine.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear each side of the stuffed chicken for 2–3 minutes until golden.
- Transfer to oven and bake for 20–25 minutes, until internal temperature reaches 165°F (74°C).
- Optional: Broil for the last 2–3 minutes for a crispy top.
- Let rest for 5 minutes before serving. Remove toothpicks and enjoy!
Notes
For best results, chill the cream cheese filling before stuffing. Don’t overfill to avoid leakage, and always cook seam-side down first to help seal the opening.
