- 1 teaspoon dried oregano
- Fresh parsley (⅓ cup, finely chopped)
- 2 cloves minced garlic
- ½ cup grated Pecorino Romano cheese
- ½ cup fresh breadcrumbs
- 2 egg yolks
Instructions
- Prepare the ingredients by combining the ground beef, ground pork, and optional veal in a large mixing bowl.
- Gently mix in the crushed saltine crackers, milk, grated Parmesan cheese, and seasoning ingredients until just combined.
- Using an ice cream scoop or your hands, form uniform meatballs approximately 1.5 inches in diameter.
- Choose your cooking method: simmer in marinara sauce for about 25 minutes or bake at 400°F for 20 minutes before adding to sauce.
- Ensure all meatballs reach an internal temperature of 160°F before serving.
Notes
Allow the meat mixture to rest for 15-20 minutes before forming meatballs for better flavor integration.
