Ingredients

  • 2/3 cup Libby’s 100% Pure Pumpkin
  • 3 large eggs
  • 1 cup granulated sugar
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese (softened)
  • 2 tablespoons butter (softened)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 10×15-inch jelly roll pan with parchment paper.
  2. In a medium bowl, mix flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat eggs and sugar until light and fluffy (about 2-3 minutes).
  4. Add pumpkin and vanilla extract, mixing well.
  5. Gently fold in the dry ingredients until just combined.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for 12-15 minutes, or until the cake springs back when touched.
  8. While the cake bakes, prepare a clean kitchen towel dusted with powdered sugar.
  9. Once the cake is done, quickly turn it onto the towel and roll it up while warm.
  10. Let it cool completely (~1 hour).
  11. Beat cream cheese, butter, powdered sugar, and vanilla until smooth for the filling.
  12. Unroll the cooled cake, spread the filling, and roll it back up without the towel.
  13. Wrap in plastic wrap and refrigerate for at least 1 hour before slicing.

Notes

Dust the towel with powdered sugar to prevent sticking and roll while warm to avoid cracking.
