- 2/3 cup Libby’s 100% Pure Pumpkin
- 3 large eggs
- 1 cup granulated sugar
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 8 oz cream cheese (softened)
- 2 tablespoons butter (softened)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and prepare a 10×15-inch jelly roll pan with parchment paper.
- In a medium bowl, mix flour, baking powder, cinnamon, nutmeg, and salt.
- In a large bowl, beat eggs and sugar until light and fluffy (about 2-3 minutes).
- Add pumpkin and vanilla extract, mixing well.
- Gently fold in the dry ingredients until just combined.
- Spread the batter evenly in the prepared pan.
- Bake for 12-15 minutes, or until the cake springs back when touched.
- While the cake bakes, prepare a clean kitchen towel dusted with powdered sugar.
- Once the cake is done, quickly turn it onto the towel and roll it up while warm.
- Let it cool completely (~1 hour).
- Beat cream cheese, butter, powdered sugar, and vanilla until smooth for the filling.
- Unroll the cooled cake, spread the filling, and roll it back up without the towel.
- Wrap in plastic wrap and refrigerate for at least 1 hour before slicing.
Notes
Dust the towel with powdered sugar to prevent sticking and roll while warm to avoid cracking.
