Homemade Potato Cheddar Pierogi: A Taste of Comfort

For the Dough:

  • 2 cups all-purpose flour
  • ½ teaspoon kosher salt
  • 1 whole egg
  • 1 egg yolk
  • 1 tablespoon vegetable oil
  • 8 ounces (1 cup) sour cream

For the Filling:

  • 4 russet potatoes, peeled and quartered
  • 2 cups sharp cheddar cheese, shredded
  • 2 tablespoons unsalted butter
  • ½ teaspoon onion powder
  • Kosher salt and pepper to taste

For Cooking and Serving:

  • Butter or vegetable oil for pan-frying
  • Caramelized onions
  • Sour cream

Instructions

  • Prepare the Dough:
    • Combine the flour and salt in a large bowl.
    • Add the egg, egg yolk, sour cream, and vegetable oil. Mix until the dough forms.
    • Knead the dough for about 10 minutes until smooth. Cover and let rest for 15 minutes.
  • Make the Filling:
    • Boil the potatoes in salted water until fork-tender (15-20 minutes). Drain and mash.
    • Stir in cheddar cheese, butter, onion powder, salt, and pepper until smooth. Set aside.
  • Roll and Cut Dough:
    • Roll the dough out on a floured surface to 1/16 inch (2 mm) thickness.
    • Use a round cutter (about 3 inches in diameter) to cut out circles.
  • Fill and Seal Pierogi:
    • Place 1 to 1½ tablespoons of filling in the center of each circle.
    • Fold into a half-moon shape and press the edges together. Crimp with a fork for a secure seal.
  • Cook the Pierogi:
    • Boil in salted water until they float to the surface (2-3 minutes).
    • For a crispy exterior, pan-fry in butter or oil for 2 minutes per side until golden brown.
  • Serve:
    • Top with caramelized onions and serve with sour cream.
