Description

Quick and delicious quesadillas that can be customized with a variety of fillings and served as a perfect meal for any occasion.


Ingredients

  • 8 flour tortillas
  • 2 cups shredded cheese (Monterey Jack, Chihuahua, or Oaxaca)
  • 1 cup cooked and shredded chicken (or other proteins)
  • 1 cup sautéed bell peppers and onions
  • 1 can black beans, rinsed and drained
  • Olive oil for cooking
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat a skillet over medium-low heat.
  2. Place a tortilla in the skillet and sprinkle cheese and desired fillings on one half.
  3. Fold the tortilla in half and cook for 2-3 minutes on each side or until golden brown and cheese melts.
  4. Remove and let cool slightly before cutting into wedges.
  5. Serve with your favorite salsa or guacamole.

Notes

For best results, use freshly grated cheese and avoid overfilling the tortillas.
