Quick and delicious quesadillas that can be customized with a variety of fillings and served as a perfect meal for any occasion.
Ingredients

- 8 flour tortillas
- 2 cups shredded cheese (Monterey Jack, Chihuahua, or Oaxaca)
- 1 cup cooked and shredded chicken (or other proteins)
- 1 cup sautéed bell peppers and onions
- 1 can black beans, rinsed and drained
- Olive oil for cooking
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat a skillet over medium-low heat.
- Place a tortilla in the skillet and sprinkle cheese and desired fillings on one half.
- Fold the tortilla in half and cook for 2-3 minutes on each side or until golden brown and cheese melts.
- Remove and let cool slightly before cutting into wedges.
- Serve with your favorite salsa or guacamole.
Notes
For best results, use freshly grated cheese and avoid overfilling the tortillas.
