  • 2 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 6 cups vegetable stock
  • 2 bay leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • Spices: ground coriander, turmeric, and paprika

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, and carrots, cooking for 4-5 minutes until softened.
  2. Add spices and stir for 30-60 seconds to release their flavors.
  3. Stir in red lentils and tomato paste, mixing well.
  4. Pour in vegetable stock and crushed tomatoes, bring to a boil, then reduce heat and simmer for about 20 minutes until lentils are tender.
  5. Finish by stirring in fresh lemon juice before serving.
