- 1 1/3 cups red split lentils
- 2 onions, chopped
- 2 leeks, chopped
- 3 carrots, diced
- 5 celery stalks, diced
- 2 garlic cloves, minced
- 1 can (15.5 ounces) crushed Italian tomatoes
- 2 tablespoons unsalted butter
- 2 tablespoons extra virgin olive oil
- 6 cups vegetable stock
- 2 bay leaves
- 1 teaspoon ground cumin
- 1 teaspoon sweet smoked paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons fresh lemon juice
- Spices: ground coriander, turmeric, and paprika
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, garlic, and carrots, cooking for 4-5 minutes until softened.
- Add spices and stir for 30-60 seconds to release their flavors.
- Stir in red lentils and tomato paste, mixing well.
- Pour in vegetable stock and crushed tomatoes, bring to a boil, then reduce heat and simmer for about 20 minutes until lentils are tender.
- Finish by stirring in fresh lemon juice before serving.
Notes
Customize with additional vegetables or spices to taste. Top with fresh herbs or roasted chickpeas for added flavor.
