Ingredients

  • ½ cup heavy cream (120ml)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, sift together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender until the mixture resembles coarse cornmeal.
  4. Pour in the heavy cream and gently fold until just combined; do not overmix.
  5. Turn the dough onto a floured surface and gently shape it into a disc about 1-inch thick.
  6. Cut into triangles or rounds and place on the prepared baking sheet.
  7. Chill the shaped scones for 15-20 minutes before baking.
  8. Bake for 15-18 minutes or until golden brown and firm on top.
  9. Let cool slightly and serve warm with clotted cream or jam.
