Instructions

  1. Cream the butter and sugar until fluffy (about 2 minutes).
  2. Beat in the egg and yolk, then add vanilla and almond extract if using.
  3. Whisk together flour, baking powder, and salt in a separate bowl.
  4. Gradually blend dry ingredients into wet until just combined. Do not overmix.
  5. Chill dough for 30 minutes.
  6. Scoop rough dollops of dough onto a lined baking sheet. Bake at 350°F (175°C) for 8–10 minutes, until edges are golden and centers are still soft.
  7. Let cookies cool for 5 minutes, then gently break into chunky pieces.
  8. Mix in desired add-ins and gently toss.
  9. Return mixture to baking sheet and bake an additional 3–5 minutes to crisp edges.

Notes
