- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg + 1 yolk
- 1 ½ tsp vanilla extract
- ½ tsp almond extract (optional)
- 1 ½ tsp baking powder
- ¼ tsp salt
- Optional mix-ins: mini chocolate chips, rainbow sprinkles, crushed candy canes, cereal bits
Instructions
- Cream the butter and sugar until fluffy (about 2 minutes).
- Beat in the egg and yolk, then add vanilla and almond extract if using.
- Whisk together flour, baking powder, and salt in a separate bowl.
- Gradually blend dry ingredients into wet until just combined. Do not overmix.
- Chill dough for 30 minutes.
- Scoop rough dollops of dough onto a lined baking sheet. Bake at 350°F (175°C) for 8–10 minutes, until edges are golden and centers are still soft.
- Let cookies cool for 5 minutes, then gently break into chunky pieces.
- Mix in desired add-ins and gently toss.
- Return mixture to baking sheet and bake an additional 3–5 minutes to crisp edges.
Notes
Do not overbake during the first round to maintain a soft, chewy texture. Add mix-ins after the first bake, and customize to taste with different flavors or toppings.
