Instructions
- Heat a cast iron skillet over medium-high heat.
- Cook the bacon until crispy and golden brown.
- Remove bacon and leave drippings in the pan.
- Sauté diced onions in the bacon fat until translucent.
- Add the diced potatoes and cook until crispy and golden.
- Crumble the cooked bacon over the potato mixture.
- Create small wells in the potatoes and crack eggs into the wells.
- Sprinkle cheese over the top and cover the skillet.
- Cook until the eggs are set to your liking.
