Ingredients

Instructions

  1. Heat a cast iron skillet over medium-high heat.
  2. Cook the bacon until crispy and golden brown.
  3. Remove bacon and leave drippings in the pan.
  4. Sauté diced onions in the bacon fat until translucent.
  5. Add the diced potatoes and cook until crispy and golden.
  6. Crumble the cooked bacon over the potato mixture.
  7. Create small wells in the potatoes and crack eggs into the wells.
  8. Sprinkle cheese over the top and cover the skillet.
  9. Cook until the eggs are set to your liking.
