Ingredients

  • 1 lb ground beef or turkey
  • 1 cup uncooked rice (or 2 cups cooked)
  • 3 bell peppers (any color), diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 ½ cups shredded mozzarella or cheddar
  • Olive oil, for cooking
  • Optional: parsley, red pepper flakes, corn, or black beans

Instructions

  1. Cook the rice and set aside.
  2. In a large skillet, sauté onions and garlic in olive oil.
  3. Add ground meat and cook until browned. Drain the fat.
  4. Stir in diced bell peppers, tomato sauce, tomatoes, tomato paste, and seasonings. Let simmer for 5 minutes.
  5. Fold in the cooked rice and mix well.
  6. Preheat oven to 375°F.
  7. Grease a 9×13″ baking dish.
  8. Spread the mixture evenly into the dish and top with shredded cheese.
  9. Bake for 20–25 minutes until bubbly and melted.
  10. Broil for 2–3 minutes for a golden crust.
  11. Let rest 5 minutes before serving. Garnish with fresh parsley or red pepper flakes if desired.

Notes

To make it vegetarian, swap the meat for lentils or meatless crumbles. For low-carb, substitute rice with cauliflower rice. This dish freezes well and is perfect for meal prep.
