- 1 lb ground beef or turkey
- 1 cup uncooked rice (or 2 cups cooked)
- 3 bell peppers (any color), diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (14 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- 1 ½ cups shredded mozzarella or cheddar
- Olive oil, for cooking
- Optional: parsley, red pepper flakes, corn, or black beans
Instructions
- Cook the rice and set aside.
- In a large skillet, sauté onions and garlic in olive oil.
- Add ground meat and cook until browned. Drain the fat.
- Stir in diced bell peppers, tomato sauce, tomatoes, tomato paste, and seasonings. Let simmer for 5 minutes.
- Fold in the cooked rice and mix well.
- Preheat oven to 375°F.
- Grease a 9×13″ baking dish.
- Spread the mixture evenly into the dish and top with shredded cheese.
- Bake for 20–25 minutes until bubbly and melted.
- Broil for 2–3 minutes for a golden crust.
- Let rest 5 minutes before serving. Garnish with fresh parsley or red pepper flakes if desired.
Notes
To make it vegetarian, swap the meat for lentils or meatless crumbles. For low-carb, substitute rice with cauliflower rice. This dish freezes well and is perfect for meal prep.
