Description

A modern twist on traditional jambalaya, pastalaya combines hearty pasta with bold Cajun flavors for a comforting and satisfying dish.


Ingredients

  • 1 lb Andouille sausage (sliced)
  • 1 lb Chicken thighs (boneless, diced)
  • 1/2 lb Shrimp (optional)
  • 2 Bell peppers (red, green, chopped)
  • 1 large Onion (chopped)
  • 2 stalks Celery (chopped)
  • 4 Garlic cloves (minced)
  • 4 cups Chicken broth
  • 12 oz Pasta (penne or rotini)
  • 2 tbsp Cajun seasoning
  • 2 tbsp Olive oil
  • 1/4 cup Green onions (for garnish, chopped)

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the sliced andouille sausage and cook until browned, about 5-7 minutes. Add the diced chicken thighs and brown until fully cooked. For a seafood twist, add shrimp in the last 2 minutes.
  2. Add the chopped bell peppers, onion, celery, and garlic to the pot. Sauté for 5-7 minutes, until the vegetables are softened and aromatic.
  3. Sprinkle the Cajun seasoning over the mixture and stir well. Pour in the chicken broth and bring it to a boil.
  4. Add the pasta to the pot. Reduce the heat and let it simmer for 15-20 minutes, stirring occasionally, until the pasta is cooked and most of the broth is absorbed.
  5. Once the pasta is tender and the flavors are well combined, garnish with chopped green onions and serve hot.

Notes

For a vegetarian option, substitute mushrooms and smoked tofu for the meat. Adjust the spice level by using milder sausage or reducing the Cajun seasoning.
