A modern twist on traditional jambalaya, pastalaya combines hearty pasta with bold Cajun flavors for a comforting and satisfying dish.

- 1 lb Andouille sausage (sliced)
- 1 lb Chicken thighs (boneless, diced)
- 1/2 lb Shrimp (optional)
- 2 Bell peppers (red, green, chopped)
- 1 large Onion (chopped)
- 2 stalks Celery (chopped)
- 4 Garlic cloves (minced)
- 4 cups Chicken broth
- 12 oz Pasta (penne or rotini)
- 2 tbsp Cajun seasoning
- 2 tbsp Olive oil
- 1/4 cup Green onions (for garnish, chopped)
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the sliced andouille sausage and cook until browned, about 5-7 minutes. Add the diced chicken thighs and brown until fully cooked. For a seafood twist, add shrimp in the last 2 minutes.
- Add the chopped bell peppers, onion, celery, and garlic to the pot. Sauté for 5-7 minutes, until the vegetables are softened and aromatic.
- Sprinkle the Cajun seasoning over the mixture and stir well. Pour in the chicken broth and bring it to a boil.
- Add the pasta to the pot. Reduce the heat and let it simmer for 15-20 minutes, stirring occasionally, until the pasta is cooked and most of the broth is absorbed.
- Once the pasta is tender and the flavors are well combined, garnish with chopped green onions and serve hot.
Notes
For a vegetarian option, substitute mushrooms and smoked tofu for the meat. Adjust the spice level by using milder sausage or reducing the Cajun seasoning.
